Do I really need to save the subtitles in IFOedit? Am I saving that much room if I don't?

You might as well keep subtitles. They take up very little space (I would say less than 10MB per 120 min movie), and come in handy when you can't understand what someone says in the movie (such as Brad Pitt's character in Snatch). So unless your DVD is only a few MB over the limit, don't bother removing the subtitles. Audio and extras are the only things that take up significant space.
