Are they different movie titles? (If you use reauthor mode in DVD Shrink can you see Movie 1 and Movie 2?) If so, you should just be able to use Shrink to rip, then re-arrange them as desired and re-encode. If you want a menu you'll have to use another program to create it. I use DVD Lab Pro, there's a free trial available.

I created this DVD in DVDLab Pro, and they are two separate films. The Star Wars intro plays when you load the DVD (It's about 30 seconds long.), and then the menus select points in the Disneyland video.
I would just like to swap the old intro for my new one, and keep everything else the way it is.
In that case, use Shrink in reauthor mode and rip just the movie titles. Then import them into DVD Lab Pro and create a new menu. Should work just fine.

Unfortunately, the menus were very intensive. Redoing them is precisely what I'm hoping to avoid. I was hoping that, since the intro came before the menus, redoing them wouldn't be necessary. :(
