Want to burn my movies, but include mp3 and text files. How is this done? (What is it called?)

A Data CD. You can img your movies and burn the img, mp3 and text files to a data cd.

Let's say the video is of speeches, and the mp3 and text files are formats of said speeches.

Breaks, would a Data CD be playable in a DVD player?

you would have to use a DVD authoring program most likely if you want them to be able to be played in a DVD player. If the video is MPEG or DVD format you can use DVD Lab Pro, if the video is AVI format you can use something like the Film Machine or I think the new DivXtoDVD might do it too.
