Copying portion of a DVD+R to a DVD-R

I briefly had a Philips DVD+R recorder and copies several of my personal films on videotape to DVD. Unfortunately the chapter selection feature didn't work properly and each of the 9 short films does not start at a chapter heading, which are just randomly (or may were on a timer) throughout the disc. When I put the disc in my iMac SuperDrive I see two folders: VTS_TS & VTS_RM. They both have a bunch of various files with VLC icons, such as VTS-01-2.VOB. When I click on them I come in the middle of one of the films. How can I access just one film to copy to a DVD-R using Toast? OR even two of them, telling the end user to just fast forward the first til he gets to the start of the desired film?

Another allied Q: Why can't I burn more data or video onto a DVD-RW which is only half full? It seems to want me to totally erase the disc before I can record on it again! No answer on this in any of my manuals or the Mac Bible.

I cant answer your First question as I don"t use a Mac (they are pretty Useless for Video stuff because of the Lack of Software and Supports for some File formats) but your other Question can be easilly answered....

You can"t Burn More Data on the Disk because a Video DVD has to retain a specific File Structure and if you Just Try to add some Data of any Kind to the Disk it would Ruin the File structure so it wouldn"t be a Playable Video DVD anymore....

Some Programs have the Feature to do On Disk editing of DVD-RW Disks that will let you edit the Video on the Disk and Change the properties of the Video but it does this while retaining the Correct file Structure and I don"t believe there are any programs in the Mac Platform that will do this For you....

If you were to Rip all of the VOB files off of the DVD and Loaded them into a Native Mpeg-2/Vob editor you could cut out the scenes that you wanted to keep and then re-author them to DVD with menu"s and Chapters but I don"t know of any Native Mpeg-2/Vob editors for the Mac so I could tell you what to use that is unless you also had a PC....
