Backuping Up X-Files Series DVD's

I'd like to backup up my collection of X-Files and other serials. Most come with 4 episodes per disk.
I'd like to split each disk into 2 seperate DVD's.
I can rip the data but how do i split into two and create playable DVD's with menu's

Rip each episode to seperate VOB's then use spruce or equivalent to create the menus.
