Anyone know of a program that allows you to back up a movie over two discs, but keeps the menu and more importantly allows you to insert a video or still picture to say at the split point or after "Please Insert Disc 2"? I know you can do this with some programs where you just split the movie without any menu and extras but I was hoping there is one out there that does it all for you or allows you to insert it in with the menu still intact?

DVDFab Platinum (gold) can do it exactly as you asked, but it is not free.

You should go the free route though. Use VobBlanker. Blank out half the disc and process it to something like c:\name of movie\disc1

Then go back into blanker and blank the other half of the disc into

c:\name of movie\disc2

If you do not understand what I mean, here it is a little more in depth:

Load the movie in VobBlanker.

Go to the main movie's VTS (the largest one). After you select it, you will see the PGC listed on the bottom half. Double click on the Main movie. It will open up a window with a list of cells and time values.

Select the about half of the cells. Now look to the right for the "blank" button. Click it. Take note of which cells you blanked. Now go back to the main window and pick the destination. If you blanked the first half, you will save to disc 2, if you blanked the second half you will save to disc 1. Click on "process" and wait. After it finished quit the program.

When you are finished re-open VobBlanker and repeat the process. This time blank out the remainder of the cells. If you blanked cells 1 through 25, this time blank cells 26 through the end of the disc. You will process this in the other folder.

There will not be a menu that says "insert disc 2" but it will jump back to the main menu when playback is finished.

You can also choose to blank out the extra features on 1 disc and part of the movie and have the extra features on disc 2 along with the remainder of the movie. You do not have to worry about accessing something not on a disc, because the DVD will just navigate quickly back to the main menu if you do (it most likely will just load for a second or two).
