It's a software which boots on your iPod, allowing you to use different functions that would not be possible through the normal iPod interface. Have a look at the iPod Rockbox FAQ, which can be found here;

@coolGray - Hehe :-)
If you hang on for a little while, my ever developing iPod modding thread will eventually expand it's horizons towards different styles of hacking, and possibly rockbox/iPodLinux. The joy of following my guides is this,
I test everything before I teach it, and alway endeavour to remember my exact methods, in order for all to share the same sucess. :-)
Wait, watch & learn.
Happy iPodding.

I have the Rockbox firmware/OS working flawlessly on my 5th generation iPod Video, and let me tell you, this little piece of code increases the rather bland iPod's functionality ten-fold.
The procedure to get the firmware onto your iPod is extremely easy to follow, and if you correctly follow all the steps on their site, you should have no problem. Moreover, because it acts as a bootloader, you can access the original firmware anytime.
I've had it on my iPod for a week now, and I find it to be stable. The only times I ever have to reboot the iPod are when I want to access the original firmware.
I have Doom on my iPod (albeit shareware) but it runs great. For a comprehensive list of all supported plugins, you can check out http://www.rockbox.org/twiki/bin/view/Main/PluginIndex
Here are some screenshots of the themes and programs, from the Rockbox site, I have running on my own iPod:

I agree, it's good software customization software. And once I have completed the second part of the strings tutorial, this will be #5 :-)

I know there are guides, but some parts of the rockbox guide are a tad vague, and it is a lot longer than it needs to be..
People are welcome to follow guides elswhere.. I write them in my own manner and then people can asked related questions in that thread..

I am running the Rockbox firmware. The Apple-firmware is completely useless to me, I bought my iPod solely because of Rockbox. Things such as Vorbis and Wavpack support, with true gapless playback is a must for me.

I'm pretty certain that the backround can't be changed using iPod Wizard.
