Either one - each holds the same amount of data - 4.38 gigs.
If your drive can booktype I would suggest using the +r. Booktyping a +r disc to dvd-rom makes the disc almost universally compatible w/ players.
If your drive can't and you have an older player I would suggest -r.
New players usally support both formats.
Wow a 3 hr video and 2 gigs!

Not a problem - we were all newbies once!
Booktyping can be done to +r/rw and +r dual discs. It makes these discs appear to be a dvd-rom which increases compatibility.
Your BenQ does support this.
Which programs are you using?
Next question that 3 hr video that's only 2 gig - what type format is the file? i.e .AVI, .iso

oops sorry..thats only half of the movie...i havent yet converted the other half of the movie..so the one i have right know would be 1 and a half hour long...for some reason when i tried to convert the other half of the movie.it told me that it was already done and asked me if i wanted to overwrite it.but i new that i only converted the first half of the movie..maybe its because i was putting them in the same folder...yeah the folder was the problem..now im converting the other half to DVD into another folder...i have 3 hours to burn untill its done converting.. :(...

do i have to combine the 2 half into 1 before burning or can i just leave it like that...

That one I don't know - I rarely do these. I would think you would need to but could be way off base.
One reason I rarely do these is the time it takes (.avi's w. Nero).
Here's a guide that may help.
