I have an AVI file which is a movie recorded in Spanish and English. When I watch it using Media Player Classic or VLC I have the option of listening to Track 1 or 2 for Spanish or English respectively.

When I convert it to a VOB video file using Cucusoft AVI to DVD 7.07 or Ulead DVD Movie Factory, the dual track feature disappears and I can only obtain the Spanish version whether I like it or not using PowerDVD.

How can I maintain the dual track feature on the DVD output?

Use VirtualDubMod. Do Stream__Stream List and select, one at a time, the track you want to exract from that AVI.
After that, encode AVI --> M2V . Ignore the audio, you can even 'disable' all streams, in VirtualDubMod, set Video___Direct Stream Copy (1:1 video copy) and save movie___mute.avi.

The streams (assume you have MP3 sound) must be converted to, e.g. MP2 224 kbps 48 kHz with FFMPEG GUI (Ac3 will be 192 kbps, but won't be 5+1, sine you have 1+1 MP3).
If you don't have MP3 sound(s) but an AVI with have AC3 sound(s) you just need to 'demux' the streams and you don't need to convert them into anyting. Just read their bitrate (384 or 448 kbps) to know what you have to insert, in the bitrate calculator you'll use later.

After you have a M2V and a couple of MP2 files, author a DVD with an authoring aopplication (oad M2V and the two audios).

Ah, for the bitrate use a bitrate calculator which helps you in selectng the 'ideal' bitrate to have a 4489 MB set with the M2V and the two audios (or insert, in the free DVTool 0.53, toghether with the "movie length" (in minutes), under "Audio format": '384 kbps AC3' while you insert 2*192 kbps AC3 streams or '448 kbps AC3' while you insert 2*224 kbps MP2 streams). The output number will be aproximately equal.
