Hi,

if you only need to strip some audio streams from vobs, you should use IfoEdit's strip stream option. you can download IfoEdit for free. It's better than first demuxing and then remuxing.
Or by using 'StreamWeaver' if you have a m2v and ac3 file and want to mux them into a vob.
Streamweaver is not for free, but with some creativity you might 'find' it.

You can also use bbmpeg to mux m2v with ac3 to get a mpg file. To burn it on a DVD you need an authoring tool that supports ac3 5.1 (most support 2-channel stereo). While DVDit 2.5 does not claim support for it, I have read postings where users have claimed that they were able to burn DVDs with ac3 5.1 using this version. All the others are really expensive and hard to 'find'. You can also use SpruceUp (no longer sold, but may be 'available') - with SpruceUp you don't need to mux the two streams, all you do is name the two files the same, movie.m2v and movie.ac3, put them in the same directory and when you select the m2v file, SpruceUp will find the ac3 and mux it in. You can then export it out to a title set (with VOBs) or as a DVD image or burn directly into DVD(R) (or CD-R/RW).

The IFOEdit method works fine if you are only stripping some streams from ripped VOBs. It will preserve the ac3.
