There's nothing wrong with your media, MCC = mitsubishi chem corp, they have never failed me. Try not to use 16x discs as they can be troublesome. I would try backing up a game you have with you just to check it works.
ACIDMX your sig is cool but its gonna get you in trouble (too big)

My advice would be to do as kiwi says and backup a disc you own to get the process right.... and also to just start doing a lot of reading about how to do stuff, sometimes people get lucky and can just copy/burn a game striaght off, but most of the time if they try to take shortcuts and not read is when they end up with lots of coasters in my experience... not a good comparison I know - but would you expect a non-mechanic to be able to tune up a car without learning about it first? I wouldn't!

I am just curious, you say you can't play them anymore.
Does this mean that they were working copies at one time?
Do you have any back ups that are still working?
It is also possible that you just got some bad copies.
If you use well known reputable sites then getting a games that doesn't work will be very rare.
This discs you used look ok, i would get a Verbatim Datalife
8X DVD-R and leave the 16X alone. The burning at 4X on an 8X DVD is also correct.
Do you know if your burner has any firmware updates available on the internet.
Just put in your model like this to check
"Sony DRU-700A Firmware" or go here http://forum.rpc1.org/portal.php
that may also help.
Go into more detail about the process from start to finsh of how you are making these back up's

Guys! You've completely missed the point of what he's said. The game loads fine, its the picture that no longer displays correctly!

Sounds very much like a TV signal related problem to me, in that the signal isnt being processed correctly anymore. Could be 1 of 3 things;

1. The TV
2. The PS2
3. The lead from the PS2 to the TV

Its very easy to eliminate these 1 by 1;
Try plugging your PS2 into a different TV & boot the game the way you used to when you could see the picture correctly. If you can see everything okay, then its your TV. If not, then its one of the other 2.
Get a hold of another PS2 to TV lead, maybe borrow one for 10 mins from a friend. Try it out on 1 or more TVs. If the pic displays correctly, then its been your lead. If not then its most likely an issue with your PS2's video output.
Try the games in a different PS2 just to make sure, again, maybe at a friend's house.

Well if it is multiple games that do this your problem is:
1. the discs were not burned correctly
2. your burners shot or needs a firmware update
3. The Ps2 has a problem with the media you use
4. or it is the PS2 or TV causing the problem.
one way to test #1-3 is make some games and try to play them on a friends modded system. If they work the problem is most likely the PS2 or TV. If they do the same thing as yours then it is most likely one of the first 3 things.

Is your PS2 PAL or NTSC? I'm assuming NTSC from your post. Try patching it with Adr Patcher or PAL2NTSC with Y fix. Have you tried Swap Magics built in video mode? It's right at the load screen, you can attempt to force the game to your region. Swap Magic's video fix doesn't always work. If that doesn't work, try patching it.

37. Q. I downloaded a PAL game, how do I convert it to NTSC?
A. Use Adrenaline patcher if it's an EA game: http://www.megagames.com/ps2/ps2_utils_files.shtml#ADRenalin%20Patcher Note: I've been told this works for non EA games as well. The screen won't be perfectly centered, unless you have a modchip that forces video mode. Or patch with PAL2NTSC patcher with Y fix for non EA games: http://forums.afterdawn.com/thread_view.cfm/121718

Adr Patcher doesn't always work. When it doesn't boot at all, that indicates a compatibility issue. Try PAL2NTSC Patcher with Y fix. Don't set the offset too high, around 32 is a good place to start. Check the readme file for more info.
