i'd go with core 2 duo (E6600) over fx-60. PSU... don't really know, but at a guess i'd say go with the 1000W version if you're getting dual gfx cards.

this looks like you mean a X-1950 and a X-1900 in crossfire, which is impossible due to the board being nForce, and the cards being different models.
if you want crosfire (which i would if i had your wallet :D ) then you should probably get (2) X1950XT-X's and the ASUS P5W DH Deluxe.

get the e6600 and put it in a asus P5W64 WS Professional with some a-data Vitesta DDR2 1000+ (or ocz pc2 8000 el dual ch platinum extreme edition if you want to oc it) with a couple of x1950xtx's(make sure one is a matser edition for xfire, and you might want to get 3rd party coolers for them) powered by a enermax galaxy ega1000ewl.

but you might want to only get one gcard and wait till the dx10 cards come out and then get two (or four if the drivers four 4xfire are available)

edit
not sure if that board does xfire with its 4 pci-e's but this one does Asus P5W DH Deluxe WiFi

i do not mean X-1950 and a X-1900 in crossfire, i want the all in wonder for the tv tuner, not a crossfire system.

price is not that important, i want something nice. let me be more specific, maybe that will help.

1) amd or intel?
2) mobo, this is where i need the most help, what mobo should i get? and why?
3) what kind of ram should i get?
4) gx2 or x-1950?
5) i want a DVR in my system, how do i do this?
7) powersupply, 1000 or 500 watt? and why?
8) speakers, which of these 2 should i get? Logitech Z-5550 / Z-5450
9) who has the g5? is it worth the loss of the 2nd side button?
10) 3007-fpw, is it worth it? is there a better 30 inch available?

i use my plasma tv as my monitor, i noticed my monitor produced a better picture. i would like to sell my plasma, a buy a 3007-fpw as my main tv. thats why i want the DVR and x-1900 all in wonder, i want my pc to be everything.

A X1900 seems a bit excessive if you are only going to be using it as a TV tuner, as you're going to be using a separate card for gfx, why not just get a TV Tuner card and leave it at that?

1) At the moment, Intel (Core 2 Duo only) is ahead of AMD.
2) I woulndn't get a nForce 4 based motherbard with a system as good as this, i'd go for the ASUS P5W DH Deluxe - which is Intel 975x
4) X1950XT-X

go with amd. amd is for more powerful systems. intel is if you just want speed. amd is good for both so take amd. and the motherboard u picked is good. i think. look up ----> (A8N32-SLI) its pretty good for right now. if you are into graphics/gaming, u could get this. everything else u picked is basically good.

you picked some of the best components in you first list. the new intel cpus, the allendales and conroes, are the best at the moment the conroes are the best. this because they use less power and use their L2 cache in a more eficent way. the mobo of chioce for these cpus is an Asus P5W DH Deluxe WiFi it has every thing a mobo should and the on board wi fi means you dont waste a pci slot, plus if your using it as you entertainment center it has this. Asus DH Remote?
It's finally here, the convenient remote controller for your PC!
Introducing DH Remote?, a convenient PC remote controller that gives users unprecedented control over their PCs from the comfort of their couches. With the touch of a button, users can quickly power their PCs on/off, put the computer into suspend mode, and turn the computer noise down. Moreover, revolutionary ASUS technology allows users to run wireless devices such as Skype and wireless AP while the computer is still sleeping. Of course the remote gives you all of the features of a more traditional remote as well, such as volume control, play, pause, fast-forward or rewind. Users can also customize the buttons to suit specific needs. Have DH Remote? in your hand and do more with your PC at a distance away! well thats what asus say about its remote and i like the sound of that. corsair make some of the most reliable ram available, but as with the cpu which model you get depends more on what you want to do with it, wether you want to overclock it or not. if your not gaming those graphic cards are overkill but they are among the best money can buy and both would make you happy heres how they sit in a list of the best
7950GX2
X1950XT-X
X1900XT-X
7900GTX, X1900XT (about even)
X1900GT
7900GT
tv cards are not somthing i know much about so i cant realy help you there. if you want great sound you want a creative sound blaster x-fi(which one is again up to you depending on what its connected to). then when you have decided all the componants in side you case then you can find out what size psu you will need by using somthing like this
http://www.extreme.outervision.com/psucalculator.jsp
and it will tell you what you need to have.

hope this helps you, its just in my opinon what would suit some of the needs you stated.
