I want to make DVD-R copies of music/concert
DVDs. I'm more concerned about the music
quality than the video quality. What steps
should I take, what software should I use to
ensure I don't lose the sound quality of the
original DVD.
I appreciate your comments.

Depends on the fact are they DVD-5 or DVD-9 discs. But generally speaking none of the methods normally used, doesn't involve downgrading the audio quality at all.
