This is what I'm thinking about getting.
Motherboard Intel BOXD975XBX2KR LGA 775 Intel 975X ATX
processor Intel Core 2 Duo E6600 Conroe 2.4GHz 4M shared L2 Cache LGA 775
video card?? (What are the advantages of having dual video cards and what would you guys recommend I do.)

2 LITE-ON 20X DVD±R DVD Burner with LightScribe Black
2 250gd hard drives (what brand should I go with?)
2 GB of G-skill RAM
what are your guys recommendations for my brand of hard drives and what video card or cards should I get?
This is my first time building my own PC, actually I'm just picking out the parts someone else is building it.
Do you guys think this will work well with today's games?
Will atlast awhile before I need to upgrade it?

$1500 dollars will get you some pretty sweet stuff. I recommend that you wait until ATI releases their R600 GPU or if you prefer NVIDIA their GDDR4 version of the GTX (8900 series) sometime in May. (Im not 100% sure about the GDDR4 GTX being launched in May, but its coming soon). Once the 8900 series is released the GDDR3 GTX will drop down to about $450 dollars. If you wait you will guarantee yourself the latest hardware. Ok, enough of that let's get down to business.

Motherboard:

DEPENDS if you want to run Crossfire or SLI in the future.

The nVidia chipset, the 680i, in my opinion is the best right now. I don't know of any good Crossfire plataforms for Intel processors.

Hard drive:
if you want performance get a Western Digital Raptor
you can also set up two large storage drives in RAID 0 configuration and it will perform nearly as well as one Raptor. I personally prefer Seagate Hard Drives like these:

Memory:
what you have is good, just make sure it's GDDR2 800 or better.

Oh and make sure you leave yourself money for an OS unless you are using linux.
