how do I rip single eps from a dvd or the vob file from the dvd. or one whole movie, and which progam should I use.

Rip the entire disc with DVDFab HD Decrypter and then use DVD Shrink, as suggested, in "reauthor" mode to move the episode(s) you want to backup.
