How can i capture analog audio to mp3s?

I want to capture sound from my Xbox to my PC. I just recently got a PCTV card, and the only sound output on it is a 3.5 mm headphone jack. I have a couple questions. Any hlep would be appreciated.

Could get a converter with a 3.5 mm heaphone Male End and a RCA (Red/ White) Female End?
Do those even exist, and would that work?

And is there a specific program i need to capture the audio?
What type of file would it be? (.wav or mp3)
