Is it possible to copy games (as ISOs) directly from a pc/laptop to a PS2 using Cat5 or USB cable?

My PS2 has a network adapter, 120gb hard drive with a HDAdvanced 3.0 disk, able to install/load backups via disk

I know it's possible to take the hard drive out of the PS2, strap it into a PC, and load games using WinHiip...but can it be done without removing anything?

Yes you can, via the CAT5 cable. There are multiple prog's that will do it, I recommend checking out SKSapps.

http://sksapps.com/index.php?page=hd.html

Just scroll through the page and find Faplink and Inlink, they work together. It's pretty much straight forward as far as this kind of stuff goes.
I know there are multiple apps that will do it maybe some might be a bit better, but this is the only one I have used and I had success with it. If you have any problems maybe try the whole HDL dump thing, with the server program I have never used it though, and it looks a little less user friendly to be honest.
