What is a good DVD to MKV Software.

What is a good software to use when you want to rip DVD to MKV. I want MKV becuase I am ripping Anime and like haveing the subtitles with English or japanese language. I have not problem view and MKV, but I am not sure what software is best (easiest) at doing it? If that doesn't work whas is the best software to convert to AVI?

I guess I don't understand how this works. I tried MakeMKV, on a dvd with several episodes of a TV show. What I wanted was a single compressed MKV file with menu. What I got was a separate mkv file for each episode with no compression. Can't see how that was better than the original DVD file.

I'm amazed at how quickly good quality tv shows and movies with small file sizes are posted and had hoped to find how this was being done. Still looking, though.

If anyone has any suggestions, I would be grateful to hear them.
