I am building a media server that will contain DVD movies, music videos, and whatever other video I can rip from a DVD. Basically I want to be able to watch the movie or video on the fly (just by opening the file) or be able to easily transfer it to another device (such as iPod). I can sacrifice the latter for the former though, as I simply want an easy way to watch the videos from a PC.

What is the best format to encode the video in? Right now everything is in .iso format and I use VLC to watch them/make playlists. However, it's difficult to transfer them to other devices and VLC's volume for .iso's actually outputs about half of what DVD-playback does for some reason.

What is the best tool (freeware) for ripping and/or encoding? If a freeware version isn't good enough, what is the best non-freeware version?

Here's 2 free apps that will do the trick: http://www.nchsoftware.com/prism/index.html or http://www.any-video-converter.com/products/for_video_free/

As for format...AVI or Mpeg2 will do it for most uses. Good Luck.

Prism is great except that it doesn't auto-detect the video settings from the DVD. Right now I'm trying to rip music videos from DVD's/VCD's that I have and the video quality varies even across the same disk (like Bjork's latest Volumen). This means I have to test out every configuration to see if it's the right one, which is virtually impossible. I could of course just settle and hope for something that looks good across all formats, but I'd think there's something freeware out there that can auto-detect and rip for me to a specified format. File size is not important.

Any Video Converter is great for converting video files that already exist, but right now I just need to create the video file.

The best bet would be AutoGK ,free, (there is a guide here on AD), and you would covert to AVI using Divx/xvid, or you can try Handbrake, also free. The latter has the option to compress using H.264, which will give a good quality in a relatively small size file.
If the DVDs are encrypted, first you have to rip them to your HDD using DVDFab (free also), and then do the conversion.

If you want to watch videos on your pc, you can rip dvd to avi. If you want to transfer it to ipod, you need to rip dvd to mp4.

It is one transfer problem, there are so many software products for free trial,so you can download some, and maybe you can easily resolve your problem.

Since your dvd files are already in ISO format, use the free fairuse wizard lite.
That program works only with ISO, it converts to multiple formats and will let you do batch conversions.
I use the h264 codec 2-pass mode and convert all my dvd's to 900 kps bitrate. That gives me the best quality.
