I have some videos in MKV containers because they contain multiple audio and subtitle tracks. I want to demux the video and one of the audio tracks out and then assemble them into an avi to play on my Xbox 360.

I've demuxed these two tracks and the video is encoded using AVC codec with a file extension ".h264". I'm not able to playback this file or open it with VirtualDubMod. How can I make an avi file out of this with xvid encoding (unless 360 supports AVC, which I don't think it does)?

Try opening the source .mkv using AviDemux.
Menu on left side, select XviD for the output.
The output file has to be given a full name (including extension), e.g. newfile.avi

XBOX 360 plays H.264 encoded videos( http://www.afterdawn.com/guides/archive/...ox_360_play.cfm ). Just use Yamb and mux the video and audio into an MP4. If the video was encoded to a certain profile, no converting would be necessary. here's all the info, you might be able to skip to the muxing step with Yamb:
