Can someone point me to a guide for doing dual layer with dvdshrink and nero? Or can you step me through it? Thanks

You are not going to need Shrink if you are doing a DL, unless you are trying to fit 2 disc in DL.

Nero isn't very well suited for DL, but if you want to then be my guest. A better program would be DVDDecryptor. It will take care of most encryptions as well as rip and burn for you. It's free and you can download it here.
