I've been using the maximum smoothness settings on shrink. This makes copying run very long. About two to three hours long. My question is, is there a big enough difference in quality to justify the long encoding time?

Just some info on the AEC settings, which will help you decide. There is a noticeable difference on my 52inch set. But if you are not seeing any difference and the amount of time that it is taking you to backup then just use the default, you may however want to try it for some of the highly compressed movies such as KK, LOTR or Munich.

Using AEC under any setting is better than not using it. Max Sharp is the fastest, while Max smooth is the slowest.
I have found the default AEC setting is fine for most DVD's.
Max smoothness can be good when having around 50% compression. It can reduce or stop the pulsing/pumping effect that can appear from using too much compression.
The AEC is not normally activated at it full effect until below 80% on the compression slider. Max smoothness is activated all the time when it is chosen
I always have AEC turned on, and usually go with the default setting.
Anything requiring more than 60% compression, i use DVD Rebuilder Pro with CCE as the encoder. It takes a while, but the results cant be beat IMHO.
I too have AEC on if it is needed it will then automatically turn on. It does make a difference especially on highly compressed. I just used it for Munich on Max Smooth and it came out very well.
