Converting to iPod for output through projection system

I have been only partially successful when trying to convert a KeyNote presentation with a 5 minute embedded video clip to .mp4 format that will then play from the new video iPod through a projection system to display for 500 - 700 hundred people.
The problem I run into is the iPod screen is 320 x 240 and when I convert using this resolution it looks OK from the iPod, but when this presentation is output through a projector it gets pretty fuzzy.
I've had mixed results with QuickTime Pro and Videora. Can anyone give any suggestions for this project?
I'm using both a Mac (iMac w/ OS 10.4.4) and a PC (Win XP Pro).

What is the size of the screen you are projecting to~? you are unlikely to get sharp picture on a large projection of a 320x240 res video..

The screen size will vary, but will more than likely be approximately 8 feet wide by about 6 feet tall.

Yeah. I'm sorry, but the best thing you can do is make sure you max out the video output config. I.e 2500kbps video, @30fps.

Late last week I got close to getting the result that I wanted, but had to make some aesthetic tweaks to the presentation and re-encode and since then I have not been able to find the set of parameters necessary to allow the resulting .mp4 file to play on my iPod anymore. I can't figure out what QT Pro setting I changed that caused the file to no longer be able to import to my iPod. I'm almost certain that my original .mp4 files were created using 720 x 540 or higher resolution, but according to this website and others I've visited I should not be able to successfully import MPEG-4 files that have a higher resolution than 48 x 480 or 320 x 240 when encoding in H264.

In theory if I decided to take the .mov file that is created after exporting the original KeyNote presentation and convert it to .mp4 format with Videora instead of QuickTime Pro what options would you recommend (i.e. MPEG-4/320x240/1500kbps Stereo/128kbps, MPEG-4/Downloaded Video, MPEG-4/Movie (0-2h) or MPEG-4/Music Videos). What are the differences between these formats?

Just so you know, if your taking a small source and expanding it that many times [3 inch screen to an 8 foot screen] your going to see significant downgrade in picture quality. The pictures at best are going to be quite fuzzy. Just look at them on your television and you'll have a smaller sample of what they look like. The quality degradation will be more severe with the projection screen then your television just because of the sheer size increase.

If you are at aspect ratio 4:3, then your res will be the 320x240. The maximum compatible output you can apply there on in is 2500kbps video output @ 30 fps (frames per second)

I realize that there will be a degradation factor to consider, but I have been able to accomplish a more than decent looking picture on a more than 8 foot screen through a projection system at least once already. I'm just checking to see what the premium settings in Videora and/or QT Pro for a project like this to see if I'm getting as much quality out of the resulting file(s) as possible.

THANX for all the help so far Lethal.
As a side note regarding frames per second, I've found that I actually get better quality with a framerate of 'current' in QT Pro and 'input' in Videora. This may not be the case for all projects, but in mine it helped tremendously.
I'll try using 2500kbps video output to see if this helps.
All other suggestions are definitely welcome.

If you give me a progress update, I'll assist you sa best I can. But there are only a few tweaks you can make - these programs aren't very versatile ;-)

Lethal, do you know of any other programs on PC or Mac that are more versatile than Videora or QT Pro. I am open to anything that will enhance the quality of the presentation I'm putting together. THANX
