Best iPod MP4 conversion settings for tv viewing?

Okay I've been at this for a couple days and I still can't figure it out. If I'm using my 60 gb iPod video mainly to watch the videos on my tv what conversion settings will give me the highest possible quality and still allow me to put them on my iPod? Like h.264 or whatever because I don't think I've tried that yet? I so far have successfully got one movie on there and I used Cucusoft DVD to iPod Converter and I had the settings at iPod to tv size 3(640x480), 1500 bits for video, 128k for audio, and the rest I don't have a clue. Whenever I use a different program to convert files that aren't dvds it wont let me put them on and this is getting really frustrating. Anyone do this enough that you'd be able to help me out? I'd appreciate it and thanks in advance.

Also I've noticed that some converters will give you a 5.1 option but is that even possible for the ipod or yeah I don't know. Peace.
