i agree 110%!!! Of course it isn't as good as real Naw'Lins beans & rice, can't get that here on the North coast USA so I make my own! sometimes I use Kielbasa instead of Andouille sausage but I like it that way as long as you get most of the salty grease out of the basa first.

The secret to cooking red beans or any type of beans is to cook whatever your going to put in the beans for a good hour so that when you put unsoaked dry beans in, they suck up the good stuff and not just a little seasoned water. You can come close to cooking New Orleans red beans anywhere, you just can't get the horrible local water that makes them NO. Same for bread. LOL

I always soak beans overnight but like this idea. I'm just not much of an experimenter and am afraid I wouldn't properly soften up the beans.
I put my green peppers, spices, ham hock, beer, sausage, and soaked beans in a pot to simmer all day long and it is yummy to me and kids but its not a favorite of my wife so I don't get to enjoy it as often as i like....
