i made the best baby backs i ever ate yesterday.
dry rub= about a cup light brown sugar, tbsp each of black pepper, cayenne pepper, paprika, chili powder
rub ribs then wrap in aluminum foil. heat in oven for 3hrs at 250 deg
when done, take ribs out, save the drippings add some bbq sauce to drippings to thicken it a bit.transfer ribs to a grill or use oven broiler. brush on dripping juice, this acts like a primer for the real bbq sauce. once dripping sauce has baked in, brush on favorite bbq sauce and cook untill sauce is carmalized and baked on proper.

I found using Emeril's seasoning at a 2 to 1 mixture with brown sugar (as the 2) is a good dry rub.. cheating a bit I know but good none the less. ;)

i spent over 3 hours cooking a great pot of red beans and rice, none of the girls in my family liked it now i have leftovers for a few days. i thought it tasted better than the food i ate in new orleans! the beans werent from a can, i pressed the garlic myself, added parsley, sage, and thyme! chicken broth and a ham hock added while it simmered, andoullie sausage in there! i dont think it was my cooking, they must not have very experienced taste palate in their mouth

Mine NEVER complains about me cooking... lol. I have perfected using less pots and pans to help her out... she was cooking the other day and used 3 pots/pans when ONE would have done the trick... after she dirtied them all up I explained it to her and said "well now you have 3 to wash" .... LMAO!!!!
OH... and anyone that complains about GARLIC smell just doesn't appreciate GOOD EATS... lol

I just got back from a red neck riviera vacation at Orange Beach, Alabama. Shopped at Joe Patti's seafood megalopolis in Pensacola and for dinner ate a 3.8lb live Maine lobster and his little brother 1.4lber. They were $8 dollars a lb. Tender as the butter they was dipped in!!
