My Younger brother bought a 2nd hand Xbox 360 console
Details
Console is Jasper Model with 250GB HDD
Console has been flashed with iXtreme LT+2.0 (Liteon Drive)
Dashboard is at version number 2.0.13599.0
Result of Xval tool : Failed AP25 Challenge
As of now console is not banned
I know if he signs into live, console will be banned as its already been flagged
anyway, He an not interested in playing online, console has been bought for offline play only
Now my question is that If I update dashboard to latest version will that also BAN the console, or I can update dashboard without getting console banned

As of now your xbox has failed ap25 challenge and has been flagged. There isn't an exact time when it will be banned thats down to microsoft when they decide to push the button. Could be tonight, could be months away. By going online to update to the latest dash isn't going to make any difference as you are already flagged. You will not be banned until they flick the switch so go ahead and update :)
Whether games will work or not depends if they are AP2.5 titles and how they've been patched.
The only way to be sure to get all games working without any hassle is to update the console to LT+ 3.0 and make sure that all of your games are fully patched with abgx360 1.0.6, re-burning any that require it.
As the consoles is already flagged for a failed AP25 challenge and you're not connecting it to Live, it won't hurt to try and boot games on it though.
Also, you can download the dashboard update from Xbox.com and put it in a USB stick and update that way. You don't have to connect the console to Live to do it.
...and if a game needs patching, rip the backup to an ISO with ImgBurn, run the ISO through abgx360 to patch it, then re-burn it, making sure you use a Burner Max burner to burn any XGD3 titles.
It might be a pain to have to do all of this, but once it's done you should have no more problems playing any games in the future as long as they're properly patched, unless MS introduce some new kind of protection.
Thanks a lot funksoulb, you are really an Angel sent by God
Got ur point, but my only question is that whether I can Avoid Upgrade to LT 3.0 or not coz
I dont have tools to open Xbox and probe to extract key, will have to ask some one so was a bit hesitant...
There are only 2 ways to get games to boot if you get that disc unsupported error (which means the AP2.5 challenges failed and the console detected that the game is a copy): -
1. Update to LT+ 3.0 and re-patch/re-burn games as mentioned above (the best option that works for all games).
2. See if you can find title updates for the games that are not working that will disable AP2.5 on those particular titles. If you Google for "horizon Xbox 360" you'll find more info on doing this, but I don't know much about it as it's only really a workaround and not something that's guaranteed to work for all games.
Oh yeah, any games that are NOT on the list I posted previously will still boot. It's only the games on that list that you will probably have issues with due to AP2.5.

OK funksoulb, as you instructed did a lot of stuff over this weekend
1. Flashed my xbox with LT+ 3.0
2. Ran backups with abgx360 1.0.6
3. Burned them to a new disks as per method posted by you,
(I dont have a Liteon drive so truncated to 97%)
I am playing 2 games NFS The RUN and Batman AC,
If I play just using the disk, they run fine, but if I install them to my HDD and then play, I get "Failed to Authenticate Disc" error after 5-7 mins of game play and xbox shuts down.
I always play game after installing to HDD (obious reason, low noise fast loading)
So will investing in a iHAS drive and then burning games to 100% solve the issue
